Jam Making. With the development of the jam making industry in the Irish Free State came a boom in fruit farming, and although some of the seventeen firms engaged in manufacture in Dublin, Cork, Louth, Leitrim and Donegal possess their own fruit farms, there is a ready market for all local fruit supplies. Dublin, which has always been the chief centre of the Irish jam making industry, boasts the oldest firm, established in 1856. Consumers in the Saor stat have the assurance that the flavour of their favourite jam is provided by the fresh fruits grown in Irish orchards.
