Canned and Cooked Meats. It used to be said of the Americans that they "eat what they can, and can what they can't." Be that as it may, it is no longer necessary to eat canned meats from America or elsewhere, because the home products are as palatable and nutritious as the imported article. Canning is one of the newest Irish industries and already factories have sprung up in Dublin, Limerick and Waterford, whence come luncheon and supper dishes and all manner of "cold table" delicacies including brawn, galantine, ox tongue, pressed beef and hams in carefully tested containers.
